
I came across a recipe for a fermented drink made from the core and peels of a pineapple, so I had to try it. Tepache is a Mexican beverage and was originally made with corn. The modern version uses pineapple rinds and core, piloncillo or brown sugar, cinnamon, and water.
Peel and core the pineapple. Set the fruit aside. Measure one pound of brown sugar.
